Bob's Red Mill Gluten Free All Purpose Baking Flour is ideal for those sensitive to gluten. This versatile blend of gluten free flours and starches is perfect for all types of baking.
Unlike our Gluten Free 1-to-1 Baking Flour, our Gluten Free All-Purpose Baking Flour is great for yeast breads, including sandwich loaves, dinner rolls and sourdough bread.
Made with an expert blend of gluten free flours and starches, this product was handled exclusively in our dedicated gluten free facility and tested using an ELISA Gluten Assay test. Note: this blend does not contain xanthan gum.
Combine warm water, yeast and sugar. Stir well and set aside to proof. This will take about 5 minutes.
While the yeast is proofing, combine flour, xanthan gum, salt and baking powder the bowl of a stand mixer. Whisk well to combine.
When the yeast has foamed up, pour it into the flour mixture and mix well with a dough hook, until a dough forms.
The dough will be soft and slightly sticky. Cover with plastic wrap and allow to rest in a draft free place for 1 ½–2 hours, or until doubled.
Preheat the oven to 450°F. Line a baking sheet with parchment and lightly sprinkle with cornmeal. With wet hands, flatten and shape the dough to the pizza shape you desire. Spread it pretty thin, since it does rise a bit when baked. Top with your favorite toppings and bake for 20–25 minutes, or until the crust is golden and cheese is melted and gooey. Enjoy!

You can replace wheat flour with Bob's Red Mill Gluten Free All-Purpose Baking Flour in a variety of recipes. We recommend that you add xanthan gum for best results when substituting Gluten Free All Purpose Baking Flour (see chart below). Yeasted breads are a little more difficult and may require eggs, vinegar and possibly more liquid to add to the recipe.
Use the quantities suggested of xanthan gum per cup of flour used. For example, if you are making cookies with 3 cups of flour, you would add 3/4 tsp of xanthan gum.
