Aduki beans, also known as adzuki beans, are tiny, reddish-brown beans with cream-coloured seams and a sweet, nutty, umami flavour. Adukis are hugely popular in Asian cuisine (they're probably familiar to most Westerners as the red beans in East Asian desserts), typically in sweet dishes including soups and desserts. But there's a lot more to these little beans than that. Hatton Hill Organic's adukis are a versatile ingredient, forming a brilliant basis for savoury stews, casseroles, curries, salads, soups, dips, vege-burger patties, fritters and more. On the sweet side, apart from their uses in Asian treats such as red bean balls and sticky rice, they're pair excellently with vanilla ice-cream (try making your own aduki ice-cream, too, if you're feeling inspired – it's a huge hit in East Asia), they make a lovely, pudding-like soup that's a subtly sweet way to round off a meal, and they're excellent incorporated into baked goods such as cookies, cakes and breads with a slightly sweet touch.
