Golden Coconut Cookies

· 1 ¼ cups all-purpose flour, ½ teaspoon baking soda and ¼ teaspoon salt
· ½ cup Health Garden's Coconut Sugar, ½ cup Health Garden's Erythritol and ½ tsp Health Garden's Vanilla Sweetener
· ½ cup butter
· 1 large egg
· 1 1/3 cups flaked coconut
Preheat oven to 350°F. In a small bowl, combine flour, baking soda and salt. Use an electric mixer to reduce the erythritol crystals to a fine powder. Add the coconut sugar and vanilla sweetener, then cream the butter and sugars until smooth. Beat in egg until light and fluffy. Gradually add dry ingredients and mix until well combined, then add flaked coconut. Use a teaspoon to place dough on cookie sheet, spaced about 3 inches apart. Bake for about 8-10 minutes in preheated oven, or until the edges of the cookies begin browning. After removing the cookies from the oven, allow them to cool on a wire rack and then indulge in this sweet, chewy treat!
